simple apple pie.

I woke up to the first SUPER chilly day of fall this morning and I thought what could be better than an apple pie, right?!

Problem #1: Not all of the ‘regular’ apple pie ingredients were in my pantry and;

Problem #2: It was Sweatpants Saturday so there was no way I was going out to Schnucks.

Solution: Use what we have! (And I couldn’t be more happier with the results — but more on that later!)

Ingredients: 4 large apples, sliced and cubed

                  1 Tbs Cinnamon (I only had Pumpkin Pie Spice on hand)

                  2 Tbs of Applesauce

                  1/4 cup Light Brown Sugar

                  1 tsp of Granulated Sugar

                  2 Tbs of Butter

                  1 tsp of Vanilla

                  1 Roll (7.5 oz) of Biscuits


I preheated the oven to 400 degrees and then sliced and cubed the apples — notice 5 are pictured but 4 were more than enough.


In a medium bowl, I mixed the brown sugar, pumpkin pie spice (cinnamon), granulated sugar and the applesauce with the cubed apples. I obviously sampled the apples — YUM.


I poured the apples in an 8×8 pan then stretched the biscuit rounds over the top.


I mixed melted butter and a little dash of vanilla to pour on top of the biscuit rounds — best idea ever! Then, I put it in the oven for 20 minutes — until the tops of the biscuits were golden brown and let cool for just a few minutes — it was hard to wait!


Holy goodness! What a yummy treat on a chilly day! (And the apple-cinnamon aroma wasn’t bad, either!)
