breakfast burritos to go.

Mornings around here are super rushed. The alarm goes off at 4:45 a.m. and hello — I am the queen of the snooze button — so I don’t start getting ready until 5:20. Between our morning routines, making sure (read: praying) that the car starts and loving on our kitty, there always seems to be about 2.5 seconds to get breakfast ready.

M and I usually do banana chips and peanut butter on toast or yogurt with granola and blueberries. We also always have fruit but were looking for another way to get protein and to squeeze in some veggies. Enter — breakfast burritos.

Yum.

What you will need: Olive oil, 1 onion, 2 bell peppers, spinach, turkey breakfast sausage, 3.5 cups of egg whites, shredded cheese and 20 tortillas.

We started by cooking down the diced onion and bell peppers in a little olive oil.

We gathered the rest of our ingredients and once the veggies were cooked down, we added the turkey sausage to brown. Once it was cooked, M emptied the onions, sausage and peppers into a strainer and I pressed all the extra liquid.

While I was doing that, M started scrambling the egg whites. After they were cooked, he wilted the spinach and then I mixed all the ingredients together and began spooning helpings on to each tortilla.

I had to master the art of rolling the burritos up — it took a while to figure it out but I finally figured it out πŸ™‚ I placed them on wax paper on a baking sheet.

Once they were all rolled, I put the baking sheets in the freezer and let them set for about an hour.

saran/plastic wrapWhen the hour was up, I wrapped each in plastic/saran wrap and put approximately 10 into each freezer bag.Β And that is where they will stay until we are in a rush (every) morning and it takes two minutes to heat them up two at a time. So good.
